Parmesan Panko Salmon

Ingredients:

  • 2-1/2 cups panko bread crumbs
  • 4 garlic cloves, minced
  • 1/4 cup chopped fresh parsley
  • 1/2 cup grated Parmesan cheese
  • 2 Tablespoons chopped fresh thyme
  • Juice & zest of one lemon 
  • 2 teaspoons salt
  • 1 teaspoon pepper
  • 6 tablespoons butter, melted, divided
  • 1 salmon fillet (3 to 4 pounds)

A few notes on making this:

  • This is simple yet delicious for a weeknight dinner—salmon cooks quickly. 
  • Have your fishmonger check your salmon fillet for pin bones (or you can check for them by running your hand along the fillet and feeling for them to poke out—they almost always have a few and need to be pulled out before the salmon is cooked. Pull them out with a set of fish bone pliers. 

Directions:

  • Heat oven to 350°F.
  • In a bowl, combine bread crumbs, garlic, parsley, Parmesan, thyme, lemon juice and zest, and salt and mix well.
  • Add 4 tablespoons butter and toss lightly to coat. 
  • Pat salmon dry. 
  • Place skin side down in a greased baking dish or sheet pan lined with parchment.
  • Brush with remaining butter and season with salt and pepper. 
  • Cover with crumb mixture. 
  • Bake at 350° for 20-25 minutes or until salmon flakes easily with a fork.
